Pineapple-Mango Smoothie (Lassi)

Mango Pineapple Smoothie

Pineapple Mango Smoothie

I had some Channa Masala and Basmati Rice today and it was pretty spicy! I was going to just get a glass of milk to cool off my mouth, but then I thought about what is traditional in India: Lassi. Most Lassi recipes are more fruit and less milk than what I am going to propose here and they usually contain sugar, something I need to reduce.  Another key ingredient is yogurt.

My version solves the sweetener situation with the honey that comes with one of those individual cups of plain yogurt with the honey on the little “sidecar”. If you like it less sweet, you could leave the honey out and just use plain yogurt  (or maybe a vanilla or lemon yogurt).

Greek yogurt with honey “sidecar”

For the fruit, I used 1 fresh mango and about 2 cups of pineapple that I had prepared fresh some time ago and had in my freezer. I also have some frozen strawberries that I could have used instead. Feel free to be creative! If you really want to get crazy, you could sprinkle a pinch of kosher salt on top…woooo! That’s just wacko ! Enjoy!

Preparing Mango

1 Ripe Mango, peeled, pit removed, diced

Other smoothie ingredients

2 c. Frozen Pineapple Chunks

1 individual serving Plain Yogurt with side cup of Honey

16 oz Lowfat Milk

Time to give it a whirl!

Put diced mango in blender. Cover with milk. Add yogurt and honey. Blend until smooth. Add frozen pineapple chunks, (you could substitute frozen strawberries, blueberries, blackberries or fruit of your choice) a couple chunks at a time until completely incorporated and smooth. Serve immediately. Makes about 2-16oz servings. Enjoy!

Weeeeeeeee! Wee, wee, weeeeeeee!
